Steak Cobb Salad with Dijon Vinaigrette

Ingredients

  • 1 pound: boneless beef top sirloin steak, cut 1-inch thick

  • 3 tablespoons: salad oil

  • 3 tablespoons: white balsamic vinegar or white wine vinegar
  • 2 teaspoons: Dijon-style mustard
  • 1 teaspoon: dried oregano, crushed
  • 6 cups: shredded butterhead (Boston or Bibb) lettuce (about one 8-ounce head)
  • 1-1/2 cups: halved grape tomatoes or chopped, seeded tomatoes
  • 1 medium: avocado, pitted, peeled, and cut into wedges, or 1/2 of a small cantaloupe, peeled and cut into thin wedges
  • 3/4 cup: crumbled blue cheese (3 ounces)
  • 6 slices: bacon, crisp-cooked, drained, and crumbled
  • 3 : hard-cooked eggs, sliced

Directions

1. Preheat broiler. Slash fat edges of steak at 1-inch intervals, being careful not to cut into the meat. Place steak on the rack of an unheated broiler pan. Broil 3 inches from heat for 15 to 17 minutes or until medium doneness (160 degree F), turning once halfway through broiling. Cool slightly; cut into thin slices. Place steak slices in a resealable plastic bag set in a shallow dish; set aside.

2. For marinade, in a screw-top jar, combine oil, vinegar, mustard, and oregano. Cover and shake well. Pour marinade over steak slices. Seal bag; turn to coat steak slices. Marinate in the refrigerator for at least 6 hours or up to 24 hours, turning bag occasionally.

3. Drain steak slices, discarding marinade. To serve, arrange shredded lettuce in a chilled large bowl. Place steak slices, tomatoes, avocado, cheese, bacon, and eggs on top of the lettuce. Drizzle some of the Dijon Vinaigrette over salad. Pass remaining Dijon Vinaigrette. Makes 6 servings.

Dijon Vinaigrette

In a small bowl, combine 1/3 cup white balsamic vinegar or white wine vinegar; 1 teaspoon Dijon-style mustard; 1 clove garlic, minced; 1/2 teaspoon sugar; 1/4 teaspoon salt; and 1/4 teaspoon ground black pepper. Add 1/3 cup olive oil in a slow steady stream, whisking constantly. Makes about 2/3 cup.

Blackpepper Lamb Chop...

ASSALAMUALAIKUM...
Melayan permintaan Cik Abe yg katanya dah lama K.Nor tak buat Lamb Chop.. erkkkk.. bukannya selalu buat sangat pun.. Tapi dah dia tu mmg suka makan menu kamben, anak dara tu pun dah mengikut citarasa ayahnya yg suka menu kamben.. Lagipun cuti sekolah ni, layan jer la kan.. Kalau nak buat time bertiga jer tak syok rasanya.. hati mesti teringat kat anak2 kalau buat something yg special sket kan..
Kali ni K.Nor tak buat Mashed Potato cuma goreng fries jer utk menggantikan Mashed Potato. Creamy Coleslaw pulak kurang sket ke'creamy'annya tu disebabkan kurang mayonis.. Takper la kurang creamy pun, sbb mlm tu coleslaw ni tetap licin.. hehe
Utk penyegar anak tekak K.Nor buat Jus Roselle.. Kiranya ngam la makan menu berlemak pastu digandingkan dgn jus masam2 manis kan..

BLACKPEPPER LAMB CHOP

Bahan : 5 kpg daging kambing
5 ulas bawang putih ~ ditumbuk halus
1 sudu besar serbuk lada hitam ~ yg baru ditumbuk
3 sudu besar sos tiram
1/2 sudu kecil garam
1 sudu besar gula perang/madu
2 sudu besar minyak zaitun
Cara:
Gaul kesemua bahan kecuali daging kambing.
Lumurkan bahan perapan pada daging dgn rata.
Perap dlm peti ais lebih kurang 1 - 2 jam. (lama lama lagi baik)
Panaskan grill pan dgn api sederhana atau boleh juga guna non stick pan. (k.nor guna pemanggang ajaib)
Letakkan daging kambing dan panggang lebih kurang 8 - 10 min.
Kemudian balikkan dan panggang lagi sehingga masak. (jangan balik2kan banyak kali, cukup hanya sekali utk menghasilkan daging panggang yg lebih enak).
Angkat dan hidangkan dgn Sos Lada Hitam, Garlic Mashed Potato & Creamy Coleslaw.

Homemade Alfredo Sauce Recipe and Tutorial

Homemade Shrimp Alfredo
It is No secret that I love Italian food, especially the yummy, creamy, buttery kinds. We don’t get to eat out much for several reasons. I have 3 kids 6 and under(read chaos and Pricey foods if we eat out, and pricey babysitter if we leave the kids at home). 2 of them have allergies that prevent us from eating out most of the time.
Hubby and I really enjoy good food, but it is hard to enjoy a meal together at this phase of our life. Crossing my fingers that a couple more years puts us in better regards to either eating out or running away.
So we fed the kids something quick and put them to bed, and he and I started cooking an item we love and wanted to savor. I used to be afraid to try to make Alfredo sauce. It seemed so scrumptious that it just seemed to be out of my league. I had dinner with another family one night and she showed me how easy it really was.
So here are some steps for you:

There are really 3 base ingredients and the rest will be based on your taste. Romano or Parmesan Cheese, Butter (real butter), and Half & Half or Heavy Cream. Don’t worry, we have made it work with other options using what we had on hand, but when we plan for it, this is what we get. I get our cheese and butter from a dairy food co-op.

We start heating our pot and add the butter, a lot of garlic, and chopped onion, and a bit of pepper. We let it cook and caramelize together.

Then we add in the Cream and Cheese. I don’t measure at all with this, we can always add more cream or cheese, or butter. It is all based on taste. I add in some basil and oregano and a bit more pepper and give it some time to simmer for the cheese to melt.

Do you see all that butter! Now I sound like Paula Deen! LOL, However that is part of the charm of this. It is not something we can eat daily. It is a treat! We savor it and dip bread in it. We taste it and see if it needs anything else. Usually just a bit of salt, but remember you don’t fully taste the salt until the sauce cools so adding and tasting it while hot will mislead you. It really doesn’t need much. In this case, since we were splurging, we added Shrimp that we sauteed, another item we don’t get much of due to the allergies in our home. So, just to make your mouth water just a bit more, here is the finale.

Now go enjoy and see how simple this really is to make. I bet you have most ingredients in your home already. A couple variations we have done based on what we had at home- regular milk, cheddar, gouda, soy milk, provolone, etc. We have used whatever milk type we have had, and the same for the cheese, sometimes multiple types of cheese. It will still work and be yummy. Don’t stress over it. Think of substitutions you can make based on allergies at your home. We still can’t do this for our kids. I can substitute soy milk but no real butter alternative works as well, and we have a dairy allergy.

Spaghetti Beef, Mushroom & Cheese Bolognese

Bahan-bahan :
Spaghetti
5 biji tomato (RM 1 wahaha murah!)
1/2 daripada 1 tube daging kisar
1 biji bawang besar
5 sudu besar cili giling
3 sachets VONO Mushroom Cheese Instant Soup
Daun bawang
: Cara-cara :



Celur spaghetti, jangan lupa letak minyak sikit untuk mengelakkan ia melekat
Tomato Puree
Buah tomato dipotong dadu. Didihkan di dalam periuk sehingga tekstur menjadi hancur. Sukatan air terpulang.
Bolognese Sauce
Tumis bawang dan cili giling.
Apabila sudah terbit minyak, masukkan daging kisar. Gaul sehingga daging bertukar warna.
Masukkan tomato puree, Vono Mushroom Cheese Instant Soup & garam.
Let it simmer/boil gently. Once dah boiled, letak beberapa genggam daun bawang.
Voila !
Tomato is loaded with folate, Vitamin C & potassium =) Sangat nutritious!
Bagi aku sedap juga pakai raw tomato! Boleh rasa tekstur tomato tu bila makan. Lagipon, ia adalah organik, tak payah beli tomato dalam tin yang ada pengawet. Aku suka hati je masukkan Vono Mushroom & Cheese soup untuk menambahkan kelikatan sekaligus memberi rasa cendawan dalam bolognese sauce ni =)
Served with potato salad on top. Budak-budak mesti suka Beef, mushroom & cheese bolognese ni sebab rasa dia tak berapa pedas & creamy !

Angel hair goreng tomyam

BAHAN-BAHANNYA :-)
200 gram spaghetti angel hari, rebus hingga lembut, gaul dengan minyak zaitun
1 gengga, udang kecik, cuci dan toskan
1 1/2 camca besar pes tomyam (kak rose guna 1 kiub maggi tomyam)
1 biji bawang besar, cincang halus
2 ulas bawang putih cincang halus
1 biji tomato, cincang halus
2 helai daun limau purut
8 biji cili padi, cincang halus (guna 2 biji jer... pun dah pedas!)
Sos ikan secukup rasa
Sedikit gula
Hirisan daun bawang untuk hiasan ( lupa nak tabur daa....)Hirisan cili padi untuk hiasan
Belahan limau kasturi untuk hiasan (ada limau nipis jer, so x buh la)
Minyak zaitun untuk menumis

CARA MEMBUATNYA :-)

  1. Panaskan minyak zaitun, tumis bawang putih, bawang merah dan tomato hingga layu dan tomato lembut. Masukkan cili padi cincang dan pes tomyam, kacau rata dan masak hingga rempah garing.
  2. Masukkan udang dan sedikit air. Bila udang berubah warna, masukkan spaghetti, gaul rata dan tambah sos ikan secukup rasa dan secubit gula. Gaul hingga mesra. Masak sekejap, rasa dan jika ok boleh matikan api.
  3. Hidang dengan menabur hirisan daun bawang dan cili padi. Perah jus limau kasturi sebelum dimakan, jika suka....
